Pancake Recipe: You’ll Need: 1-2/3 cups mix, 1-1/4 cup milk, 1 egg. 1. Heat skillet over medium-high heat or griddle to 375 degrees F. (Surface is ready when drops of water jump around.) To measure mix, we recommend spooning into a dry measuring cup and leveling. 2. Stir Together mix, milk and egg with fork or wire whisk until smooth. Pour slightly less than 1/4 cup batter onto hot greased skillet for each pancake. 3. Cook until bubbles break on surface and edges just begin to dry, about 1 minute 30 seconds. Turn; cook until golden brown, about 1 minute 30 seconds. 12 (3-inch) pancakes. High Altitude (3500-6500 ft): No change. Waffle Recipe: You’ll Need: 1-2/3 cups mix, 2 tablespoons vegetable oil, 1-1/3 cups milk, 1 egg. 1. Heat waffle maker. 2. Stir Together mix, milk, oil and egg with fork or wire whisk until smooth. Pour onto center of greased waffle maker. 3. Bake about 5 minutes or until streaming stops. Remove carefully. 7 (4-inch) waffles. High Altitude (3500-6500 ft): No change. Make it Vegan. Swap milk for a non-dairy milk and 1 egg for 1/3 cup applesauce. Store in a cool, dry place.
