Store in a cool dry place. When preparing dried chiles for a sauce, wash thoroughly, removing the stem and seeds. Removal of the seeds will reduce much of their spiciness. When working with chiles, be careful of the oils which can burn your hands. Wear plastic gloves and be very careful not to touch your eyes.
