Grapes for our 2022 Pinot Noir hail predominately from Potter Valley in Mendocino County. Great day-night temperature variations separate Potter Valley from other growing areas in Mendocino. Mid-day this inland valley can be hot, but nighttime temperatures plummet. Under these conditions Pinot Noir flourishes, developing distinctive but refined character. Small amounts of Pinot are also sourced from Suisan Valley and the Petaluma Gap with the goal of making a vibrant and varietally characteristic Pinot Noir. All of the grapes were hand harvested and brought to the winery to ferment separately. We 100% destem to lessen tannin and then transfer the grapes to tank as whole berries. We let the wine naturally begin fermentation and cap the temperature at 80F. We use a mixture of cap management techniques to extract all of the flavor, without getting any bitter elements, and leave the grapes on skins for up to 14 days before pressing. After this the wine is inoculated with ML bacteria and transferred to barrels for aging. The wine is aged in French oak for 15 months before bottling.
