1. Heat pancake griddle to 375°F (medium heat). Lightly grease griddle. 2. Whisk pancake mix and water. Measure mix by lightly spooning it into measuring cup and leveling it off. Whisk mix and water. Do not over-mix. Let batter stand 2 minutes. Pour slightly less than 1/4 cup batter per pancake onto griddle. 3. Cook 1–1-1/2 minutes per side. For light and fluffy pancakes, flip only once, when tops bubble and bottoms are golden brown High Altitude: No adjustment necessary. Reconstitute: For 6–7 4-inch pancakes, use 1 cup mix and 2/3 cup water. For 12–14 4-inch pancakes, use 2 cups mix and 1-1/3 cups water. For 18–21 4-inch pancakes, use 3 cups mix and 2 cups water. For 24–28 4-inch pancakes, use 4 cups mix and 2-2/3 cups water. Tip: For thinner pancakes, add more water. For thicker pancakes, add more mix.
