Ingredients You Need: 4 oz. peeled and deveined shrimp or sliced boneless, skinless chicken. 1 tbsp. vegetable oil. 1 green onion, sliced. Bean sprouts, chopped peanuts and cilantro, and lime wedge (optional). Directions: 1. Cook rice noodles in boiling water 4 minutes. Drain noodles. 2. Mean while, stir-fry shrimp (or chicken) in hot oil in nonstick skillet over medium-high heat until fully cooked. 3. Reduce heat and stir in sauce and green onion. 4. Serve over hot cooked noodles. Top with bean sprouts, peanuts, cilantro and lime wedge, if desired.
